Mad About Sucre – Singapore
I’ve gone bonkers. Absolutely bonkers for Mad About Sucre. In my opinion, this is one of the best patisseries I’ve tried this year.
Mad About Sucre is a spanking new patisserie opened by a sibling duo – the sister is the baker. She was trained at Le Cordon Bleu and headed the Sugarplum Cakeshop in Paris before coming back to SIN City. Note to self, visit Sugarplum Cakeshop in Paris in July.
The cakes are preservative-free and only contain 100% natural fruit purees and colouring.
And it shows. I fell completely and irreverently in love with the Coco Citron. Mad About Sucre’s take on the tarte citron is stellar. The curd is flavoured with tangy lemon zest and just the right amount of juice to give it enough tartness that meshes oh-so-well with the cream. Tres tres bien. The tart is adorned with a coconut mousse “patty” topped with melted brown sugar. J’adore!
My friend – who loves cheese cakes to death – had a foodgasm at the Passionne. This four-cheese whipped cheesecake is light and airy with the tropical scent of passionfruit at its fore. The cocoa nibs that came with the cake helped had a gritty and earthier taste to the otherwise silky smooth cake.
Oh, aussi j’adore le Moulin Rouge! Le film et le gateau! The Moulin Rouge was inspired by a smokey cigar filled cabaret which results in this sponge cake with walnut parfait, almond brittle and charred caramel. Miam!
Check out the beautiful layers of this martini dessert. The Carpentras is layered with bourbon Madagascan vanilla, strawberry vodka cream, strawberry coulis, raspberry glaze and almond chips coated in chocolate. Definitely adults only.
Chocolate lovers would go cuckoo for cocopuffs at the San Domingue. Coated in luscious layers of dark chocolate hiding a caramelised banana centre, this grown up dessert comes topped with a heady shot of rum encased within the chocolate cube up top. The entire confection sits atop a crisp Brittany biscuit.
