Making Mango Chicken – Singapore

I’m been in a experimental mood lately so, I’ve begun all this culinary wizardry in the kitchen. My boyfriend is waging a war against carbs for dinner as well, so to make tasteless meat, well tasty… I attempted to make my version of Mango Salsa Chicken.

I got some chicken breast and fillets from the supermarket, seasoned it with pepper and lime, and sautéed it in a pan with olive oil and garlic.

I had some leftover mangoes- about one and a half – sliced them up, and simmered it with a pinch of salt, pepper, a tablespoon of Tabasco sauce and a tablespoon of lime juice.

After about 1/2 and hour, dinner for three was served.

Voila, pretty good if I don’t say so myself.
